French Toast in 15 minutes

This mouth watering delicious breakfast was our most favourite one during our retreat in Morocco and our chefs at The O Hotel were kind enough to share with us this delicious recipe.

It doesn't take long to make and it's the perfect way to use that leftover bread instead of throwing it away. I'll make a remark on that because I hate wasting food, it is such a waste of resources if you think about it. Not just the money you paid for it, but all the people it took to make and transport that food to the supermarket. Nowadays one third of the food produced in the world is lost or wasted. You can check more about this topic on the link here.

Recreating left overs or food that's almost off (but still ok to eat) is a great contribution to the planet and to your pocket, of course. So let's get to this delicious recipe! It is veggie but not vegan but I will give you some substitutes in case you are vegan, the texture might change a bit but it will be just as yummy I promise!

WHAT YOU NEED (1-2 persons)

For the toast:

2 thick slices of bread - (it doesn't have to be fresh bread but it works with fresh bread too, it can be that bread that's a bit hard and you were gonna throw it)

1 egg (if you want to make it vegan substitute for 2 tbsp of melted coconut oil)

1/2 cup almond milk or any other of your preference

1 tsp cinnamon

1 tiny pinch of salt

To serve:

Anything you like, my favourites are fried banana (in coconut oil), greek yogurt and honey. Maybe some toasted coconut to top it off. If you're vegan you can use coconut yogurt and maple syrup instead, you won't be disappointed!

HOW TO

Mix all the ingredients in a baking tray, make sure the eggs are well mixed and not in peaces. Take the toast and fully soak with the mixture, the more the better, otherwise your French toast might be too dry. Fry it for 3 minutes on each side or until golden brown. Top it off with your favourite stuff and enjoy!!
