Spinach & Feta Gluten Free Pancakes
A delicious breakfast or lunch that it can be prepared in like 15 minutes max? It's gotta be my favourite newest recipe obsession! I just love how you can also make a bunch of them and have it later for a snack or you can save for next day. You can also get super creative with the toppings, I had avocado, egg and vegan "bacon" for mine but you can have yours with whatever you have in hand (plain is also absolutely delicious).
WHAT YOU NEED (makes 3 to 4 medium sized pancakes)
1/2 cup soy milk (or whichever non sweet one you have)
4 generous tbs buckwheat flour (you can use other flours but this one is a great gluten free substitute that still makes a fluffy pancake)
1 pinch of salt
2 handfuls of fresh baby spinach
1/4 block of feta cheese
olive oil to cook
TO SERVE: pick two or three from the list
Blend all ingredients except the feta with the hand blender. Crumble the feta with your hands and add to the mixture. Drizzle some olive oil on a non stick frying pan pour small portions. Flip when thoroughly cooked on one side (about 2 minutes or until golden crisp). Do the same on both sides. Finish up adding your favourite toppings!
