It's that season again! Sweet potatoes all around and an inexplicable craving for cake and warm tea.. I got given a bunch of sweet potatoes from my neighbours and a day after another bag from friends who have a farm, so what to do with so many sweet potatoes?
Thats how the seeking for this recipe started. Mind you my partner and I were isolating then because we caught COVID (we are well thanks!) so we had to do with what we had in our house. So we pretty much mixed a few different recipes and came up with this one, glad it turned out ok because it could have gone so wrong also haha!
That's the beauty of cooking, you can get as creative as you want and the results can turn out just about anything. And when it turns out good it feels like such a victory! So let's get to this super easy yummy packed with good healthy stuff treat!
WHAT YOU NEED
1 cup cooked and mashed sweet potato
1/4 cup oure cacao
1/4 cup white flour (you can you plain or white spelt)
1/4 cup melted coconut oil
1 tblsp honey
2 tsp baking powder
HOW TO
First pour the liquid ingredients and sweet potato in a bowl, with a hand blender mix it together. Then slowly add the flour and cacao while using the hand blender to get rid of any lumps. For last add the baking powder. Bake it in a pre-heated oven at around 180 degrees celsius for about 20 minute or until it looks cooked thoroughly.
It's important to let it cool completely before serving it (otherwise its gonna be like mash potatoes texture). Serve it on its on or with a big scoop of your favourite ice cream. Enjoy!
