Vegan Fajitas in 15 minutes


Oh yes fajitassss, because who doesn't love a good Mexican?? I'm just gonna cut all the bullshit and get straight to this delicious recipe that's so easy to make a 5 year old could totally cook this!


WHAT YOU NEED


1/2 white onion

1 red capsicum (or you can mix colors)

100g mushrooms (this is optional but totally delicious)

150 smoke tofu

1 tsp smoked paprika

1 tsp cumin powder

salt & chilli powder (oh yesss) to taste


Cut all the ingredients into thin strips, in a frying pan start with the onions, the add capsicum and mushroom, when thoroughly cooked add the tofu and spices last. Always stirring. Cook until you get the golden brown edges on the tofu.


Slap this on a pair of tortillas, my choice was a gluten free version made of tapioca and corn flour (just delicious). The sides are pretty much optional. My favourites are refried beans, guacamole, cheese and sour cream (or plain yogurt works the same). A lime wedge, some fresh coriander on top and yummmmm have a feast!
